How to Cook Reef Fish

Tropical reef fish are the basis of many culinary preparations in the Caribbean, South Pacific and other coastal regions. Many varieties of reef fish are edible, and they can be prepared by both dry and moist cooking methods, as well as grilled and baked en papillote, or wrapped in parchment paper. The fish themselves are relatively low in fat and nutritious, although preparation techniques such as breading or cooking in heavy cream sauces add considerably to the fat and calorie content.
