It's time for the big game and everyone is gathered around the big screen. Part of the excitement of Super Bowl Sunday is the great food and snacks, but it's hard to enjoy them if you're trying to eat healthy. Instead of missing out on the fun, you can prepare snacks that taste great and are healthy.
7-Layer Dip
It may sound bad for you, but a low-fat version of a classic dip can be a great tasting alternative. Start by layering a dish with fat-free refried beans. Next, add a layer of fresh guacamole by mixing mashed-up avocado with lime juice, onion and garlic. Use fat-free or light sour cream for the next layer, followed by green chiles. Add fresh, diced tomatoes and chopped olives and top off the dip with the final layer of sharp, skim milk cheddar cheese. Serve with baked tortilla chips and your guests won't even know they're eating a healthy snack.
Spinach Dip
A classic favorite doesn't have to take up your allotted calories for the day. This healthy spinach dip recipe will give you all the flavor you need with less fat and fewer calories. Start by thawing one package of frozen spinach and squeeze until dry. Mix together 1 ¾ cup non-fat yogurt or sour cream with ¼ cup light mayonnaise and ¼ package of dry vegetable soup mix. Add in a can of water chestnuts and 2 tbsp. chopped chives or green onions. Add the mixture to the dried spinach, stir and let chill for a few hours. Serve the dip in a hollowed out whole-grain bread bowl and you've got a healthy dip everyone will love.
Zucchini Fries
Instead of those fattening French fries you always see at a Super Bowl party, try this alternative. Not only are they tasty, they provide a full serving of vegetables without all the excess fat and calories. Cut up several zucchini into long, thin spears. Whisk one egg white in a small bowl and add ¼ cup of skim milk. Combine ½ cup seasoned bread crumbs with ½ cup Parmesan cheese in a separate bowl. Dip the zucchini spears into the egg mixture and then roll in the bread crumb/cheese mixture. Place on a baking or cookie sheet and place in the oven at 425 degrees F for 25 to 30 minutes, or until golden brown. Serve with low-fat or fat-free ranch dressing.
