To receive all the benefits apple cider vinegar has to offer, you have to make sure the vinegar is organic, undiluted and unfiltered. Conventionally grown apples are sprayed with pesticides that leach into the vinegar during the fermentation process and can be harmful to your health. Organic apples used to make organic apple cider vinegar are pesticide-free, making a vinegar that has been used in folk medicine as a remedy for many ailments, including inflammation and diabetes.

Cholesterol

Apple cider vinegar's pectin content can help you reduce bad cholesterol. Pectin is a complex carbohydrate that, according to a study done by Utrecht University in the Netherlands, is thought to increase the excretion of bile acid in the body, stimulating the liver to produce more. Since bile acid is produced from cholesterol, this decreases the cholesterol that is stored in the body.

Organic apple cider vinegar contains magnesium, which helps with digestion and assists with the proper absorption of calcium for healthy bones.

In his book "Folk Medicine: A Vermont Doctor's Guide to Good Health," Dr. Deforrest Clinton Jarvis says apple cider vinegar disperses acid crystal buildup in the body, which is thought to be the cause of osteoarthritis.
