Most nutrition experts agree: Breakfast is the most important meal of the day. But mornings are often when you are in a rush and may be tempted to skip a meal to save time. Fortunately, there are plenty of quick and nutritious breakfast options. Enjoy a hearty hot meal or a refreshing cold breakfast before you start the day.
Egg Sandwich
You can have eggs without taking the time for a sit-down meal. Make yourself a fried egg sandwich for the road. Toast a whole-wheat English muffin while you are frying an egg over-easy in nonstick cooking spray. If you like, break the yolk so it won't be messy. Put the sandwich together with a thin slice of cheese. The cheese will melt slightly from the warmth of the toast and egg. Heat milk in a to-go mug and add freshly brewed coffee. Grab an orange, and you've got a hearty, tasty and complete breakfast.
Scrambled Eggs
Do you prefer your eggs scrambled? If so, crack and beat an egg or two, or a whole egg and two egg whites, using a microwave-safe bowl that has been sprayed with nonstick cooking spray. Add 1 tbsp. of milk for each egg. Add a couple of chopped mushrooms and a couple of tablespoons of shredded cheese if you like. Microwave the mixture on high for 30 seconds. The eggs will be partially cooked. Stir and break up the egg mixture with a fork and cook further in 10-second intervals until the mixture is more solid than liquid. Season as you like and wrap your fluffy scrambled eggs in a whole wheat tortilla with 2 tbsp. of salsa. Pair with a 100 percent juice box.
Smoothies
Smoothies are quick, convenient, refreshing and, especially if you make them yourself, can be very nutritious. You get protein, and at least one serving of milk and fruit in one recipe. Ingredients include one cup of skim milk, two scoops of vanilla-flavored protein powder, 1 heaping tbsp. each of cocoa powder and peanut butter, one sliced banana, a few drops of stevia liquid sweetener and four or five ice cubes. Blend all and enjoy on the go.
If you don't like peanut butter and/or chocolate, simply create your own smoothie. You need frozen or fresh fruit plus ice, whey or soy-based protein powder, yogurt and/or milk and an optional sweetener, such as honey. The possible combinations are endless.
Other Options
You do not have to prepare a recipe in order to enjoy a quick breakfast. There are plenty of ready-to-eat options. Grab a light yogurt, a piece of fruit and a low-sugar protein bar for an energizing breakfast.
If you like hot cereal, ditch the sugary instant oatmeal packets and make quick-cooking regular oatmeal in the microwave. It only takes a couple of minutes and is a healthier, all-natural option. Sweeten it yourself with a bit of brown sugar, and sprinkle some chopped nuts and dried fruit on top.
