Yoplait states that its light yogurt is fat free and has fewer calories than the original Yoplait yogurt, while claiming the products taste the same. The nutrition facts provided by General Mills, the makers of Yoplait yogurt, also state that Yoplait Light contains 15 percent of the recommended daily value of vitamin A, 20 percent of the daily recommended value of calcium, 15 percent of the recommended daily value of phosphorous and 20 percent of the recommended daily value of vitamin D in each 6-oz. serving.

Animal Ingredients

Yoplait Light yogurt contains three animal-derived ingredients, two of which are milk-based. Listed on the ingredients panel are cultured pasteurized grade A nonfat milk and nonfat milk. These two ingredients are processed milk. The majority of fat has been removed from the milk, leaving the liquid and nutrients behind, as outlined by “Milk and Cheese.” The third animal derived ingredient listed in Yoplait Light yogurt is kosher gelatin. Regular gelatin is made by boiling the bones, skin and tendons of animals, usually cows or horses. Kosher gelatin, by comparsion, is made from beef skin or fish bones. Since it is not technically flesh, it is acceptable under Kosher law to mix this ingredient with dairy products, as outlined in “Jewish Cooking for Dummies.”

Vegetable Ingredients

There are two vegetable-based ingredients included in Yoplait Light yogurt, both of which are corn products. High fructose corn syrup is a sweet sugar substitute. Modified corn starch is a substance that gives the yogurt texture. Modified corn starch is made from the germ and endosperm of corn. The corn is fermented, and the starch is removed from the corn kernel, as outlined by “The Encyclopedia of Food and Color Additives.”

Fruit, Flavorings and Color Additives

As of 2010, there were 22 Yoplait Light yogurt flavors, including traditional fruit flavors such as strawberry and cherry, as well as more decadent dessert flavors like key lime pie and red velvet cake. Each of these flavors has different fruits and flavorings included to give the yogurt its taste. The fruits and flavorings in the different Yoplait Light yogurt varieties differ. For example, the blackberry pomegrante flavor contains pomegranate juice concentrate, grape juice, beet juice and natural flavor. The peach flavor contains annatto extract, peaches and natural flavors.
