The Vegetarian Resource Group says that beans are a good source of protein for people who are vegetarians. Being a vegetarian means that a person does not eat meat, and must get her protein from other sources. Beans that are high in protein include baked beans (without the bacon), pinto beans, black beans, kidney beans and white beans. There are many meals that can be made with beans that are good options for vegetarians.
Nachos
The green lifestyle publication Web Ecoist notes that nachos made with beans can be a healthy alternative for those who are vegetarians. Start with corn chips and top with kidney beans, sliced olives, sliced jalapenos and cheese and warm in the microwave for one minute. These nachos can be topped with salsa and any vegetable a person wants. Good examples include lettuce, tomato, avocado or sliced green onions. Black beans or pinto beans can also be used for variety or a different taste.
Salad
Using beans in a salad makes a light meal for a vegetarian, according to Web Ecoist. Start with thawed fiesta vegetables (red pepper, corn, black beans and broccoli) and mix in jalapenos, salsa and cottage cheese. This mixture can be eaten alone or on top of a bed of salad greens. For variety, any type of veggies and beans can be substituted. A roll or bowl of soup can be added to make a bigger meal.
Veggie Burgers
The Savvy Vegetarian describes a burger that is made with black beans and vegetables. Cook bell pepper, onion, celery and garlic until soft. Mix in desired spices (such as cumin, paprika or cayenne pepper). Mash the cooked black beans and add to the vegetables, along with some breadcrumbs to hold it all together. Mix well and moisten with hummus and soy sauce. Once the burgers reach the desired consistency, make them into patties and grill. These vegetarian burgers can then be served on buns topped with lettuce, tomato, mayonnaise, pickles, ketchup, mustard or any other desired topping. Add some roasted potatoes or pasta salad to round out the meal.
