Nectarines are a type of fruit, with a thin skin colored yellow to red, sweet and slightly tangy yellow flesh and a hard pit in the center. While many people believe nectarines are different from peaches, they are actually the same type of fruit. According to the Ohio State University Extension Service, the only difference between them is that peaches are fuzzy, while nectarines are smooth. To peel nectarines, you can blanch them in boiling water. This method loosens the skin of the nectarine from the flesh, making it much easier to peel.
Step 1
Place a large cooking pot filled halfway with water on the stove and bring the water to a boil.
Step 2
Place a large bowl on the counter near the stove and fill it with halfway with water and enough ice to chill the water thoroughly to make an ice water bath.
Step 3
Put the nectarines in a colander and rinse them in the sink to remove any dirt or pesticides. Place the nectarines into the pot of boiling water for between 30 seconds and 1 minute, depending on the ripeness of the fruit.
Step 4
Use a large spoon to carefully remove the nectarines and place them in the ice water bath. Allow the nectarines to cool completely.
Step 5
Remove the nectarines from the ice water. Grasp each nectarine firmly to prevent it from slipping in your hands, yet carefully, so as not to bruise the fruit. Push the skin of the nectarine with your thumbs across the surface of the fruit until it breaks open. The skins should slip off easily. Peel the skin from the fruit. For stubborn spots where the skin will not come off easily, remove it with a small pairing knife.
