A List of Foods Containing Vitamin K

There are 13 vitamins total. Four of which are called "fat soluble" meaning they are stored for a long period of time in fat cells of the body where they can be utilized when needed. Vitamin K happens to be one of the fat-soluble vitamins along with vitamin-D, vitamin E and vitamin A. One of the main functions of vitamin K is to help with the formation of blood clots.

Baby Spinach

To many people, spinach is looked at as a super food for its high fiber and iron content. Iron is important for the proper transport of oxygen to the body, and fiber is important for the proper elimination of wastes from the body. But spinach is also high in vitamin K. This goes for all forms of spinach which include fresh, canned and frozen.

Kale

Like spinach, kale is another greens vegetable. It is often used in juices at health food stores, and it is often steamed with a little bit of olive oil. No matter how it is prepared, it is high in vitamin K.

Collards

Collard greens are similar to kale in appearance, except they are smooth instead of having ruffled edges. In addition to being high in vitamin K, they are also high in manganese and two of the other fat-soluble vitamins--vitamin A and vitamin C.

Remaining Greens

There are three other types of greens that are also high in vitamin K. They are better known for their use as side dishes and condiments. They are mustard greens, beat greens and turnip greens.

Cruciferous

There are a collection of vegetables that belong to the cruciferous family. They are high in fiber, vitamin C, folate and vitamin K. Some of these include broccoli, cabbage and brussels sprouts. They can be eaten raw, but it is recommended to steam them to better release the nutrients.

Lettuce

Lettuce comes in many different types. All of which are high in vitamin K. Some examples are green leaf, red leaf, Boston butter and a form of lettuce called endive.

Watery Vegetables

There are a few vegetables that have a high water content and are also high in vitamin K. These include asparagus, celery and cucumbers. These vegetables also have a high alkalinity.
