Ginger root is the underground stem, or rhizome, of the ginger plant. Ginger is used extensively in Asian cooking to add flavor and a bit of spice to numerous dishes. For over 2,000 years, ginger root has been used in China to relieve nausea, diarrhea and digestive problems, according to the University of Maryland Medical Center. Ginger is often used dried as a spice, but is more pungent and flavorful when fresh, and is easily stored for future use.

Step 1

Choose a ginger root with a smooth skin that is free of discolored knots or mold to ensure its freshness.

Step 2

Wash your ginger off thoroughly with cool water and a produce brush or clean cloth. Spray the root with an organic produce wash if you have one.

Step 3

Dry your ginger root well with a clean cloth, then place it, unpeeled, into a paper bag, and into the vegetable crisper of your refrigerator. Leave it for up to three weeks, using as needed.

Step 4

Place unpeeled ginger into a plastic freezer bag and store in the freezer for up to six months if you want to keep it longer, according to the World's Healthiest Foods website.

Tips and Warnings

  • Peel fresh ginger with a paring knife. Add fresh ginger to lemonade or salad dressings for some extra spice.
