Casein is a naturally occurring protein found in dairy products. It is one of two main proteins found within the dairy group. The other protein being whey. According to Amy Brown, Ph.D., R.D., casein makes up approximately 80 percent of all the protein found within milk. L. Kathleen Mahan, M.S., R.D., states that many humans have an intolerance to casein which is rarely diagnosed and is generally not life threatening.

Milk

Milk is the main ingredient of mainstream dairy products. Brown and other food scientists state that 80 percent of all milk protein is casein. This means that of the 8g of protein found in 1 cup of milk, that 6.4g of that protein is from casein. The remaining 1.6g of protein is from whey.

Cheese

Some varieties of cheese are made of entirely casein proteins. During the production process, the milk proteins separate into curds and whey. The curds contain all the casein protein and that product is made into different cheeses. There are some cheeses on the market that are made from the whey not the curds.

Casein Supplement

There are many protein supplements on the market that are made entirely of casein protein. The have been extracted from milk and contain an average of 20 to 25g of casein per serving. Many of the casein supplements contain all four forms of the protein. A casein supplement is the most concentrated form of the protein and is just as natural as milk.
