Delicious Breakfast Ideas for Kids

You already know breakfast is the most important meal of the day, but it can be tough to convince your kids to eat heartily in the morning when toast and cold cereal are the only foods in the breakfast rotation. Many parents find it difficult to come up with interesting new breakfast ideas that appeal to children since traditional breakfast foods tend to be bland and monotonous. Fortunately, all it takes to get your kids excited about breakfast again is putting a new spin on classic favorites and introducing a few deliciously nontraditional flavors to the morning meal.

Potato and Cheese Frittata

In a medium skillet, cook three diced potatoes in a tablespoon of oil until tender but firm; season with 1 tsp. garlic powder, 1 tsp. dried basil and salt and pepper to taste; beat six eggs with ½ cup milk and pour over the potatoes; sprinkle the top with ½ cup shredded cheddar cheese; reduce the heat to low and cover for about seven minutes or until eggs have set.

Apple Cinnamon Oatmeal

Prepare one serving of oatmeal by mixing plain rolled oats with water or milk according to package directions and heating in the microwave or on the stovetop; stir in ¼ cup unsweetened applesauce, 1 tsp. brown sugar and ½ tsp. cinnamon.

Breakfast Pizza

Cook crumbled ground sausage in a pan over medium-high heat; scramble six eggs with diced onions and bell peppers and add salt and pepper to taste; spread 1 tbsp. of olive oil over a prepared pizza crust and top with the eggs and sausage; sprinkle 2 cups of cheddar cheese evenly over the top and bake the pizza in a 400 degree oven for 20 to 30 minutes until the crust is crisp and the cheese is lightly browned.

Fruit and Yogurt

Mix berries, peaches or any other fruit your child likes into plain yogurt and stir in a tablespoon of honey and two tablespoons of shredded coconut. For an extra rich, creamy treat and a protein boost, choose Greek yogurt over the regular kind.

Breakfast Sandwich

Melt a slice of cheese on a whole wheat English muffin in the oven and top with a scrambled or fried egg and turkey bacon or a sausage patty.

Breakfast Burrito

Scramble two eggs with a handful of cheddar cheese and ¼ cup black beans; top with salsa and roll up in a warm tortilla.

Pumpkin Oatmeal

Prepare one serving of oatmeal by mixing plain oats with milk according to package directions and heating in the microwave or on the stovetop; stir in 1/8 cup canned pumpkin puree, 1/8 tsp. pumpkin pie spice and a dash of cinnamon. If the oatmeal isn’t sweet enough, add a spoonful of brown sugar and a handful of raisins.

Peanut Butter Chocolate Chip Waffles

Prepare homemade or frozen waffles; spread each waffle with a tablespoon of peanut butter and top with diced bananas and mini chocolate chips.
