Easy Meal Ideas for One

Easy meals are simple to prepare and a cinch to clean up. Busy singles who want to eat right should shop ahead and keep some simple ingredients in the kitchen for quick meals. When cooking for one person, consider making two portions and eating the leftovers the next day or placing them in the freezer for a future meal.

Feta and Garbanzo Salad

Feta and garbanzo salad is an easy, low-calorie meal for one person. Inspired by FitnessMagazine.com, this dish provides five out of six food groups on one plate and does not require cooking. Start with medium-size salad bowl. Add 2 cups of salad, a 1/2 cup of cooked or sprouted garbanzo beans, a 1/2 cup of sliced cucumber and 2 tbsp. of crumbled feta cheese. In a small bowl, use a fork to whisk together 1 tbsp. of olive oil with either 1 tbsp. of lemon juice or vinegar. Pour the dressing over the salad, sprinkle a pinch of oregano, white pepper and paprika over top and toss. Eat this salad with one piece of whole wheat pita bread.

Carb Up with Spaghetti

A spaghetti dinner is easy to prepare and low in fat. This meal, suggested by Darcy Eaton, a certified triathlon coach, helps you "carb-up" for endurance activities such as a bike race. Use a 1/2 pound of whole wheat or gluten-free pasta and prepare it according to the directions on the package. Drain and return the spaghetti to the pot. Promptly pour up to 1 cup of sauce over top and stir on low heat until it reaches the desired temperature. Sprinkle a couple of tablespoons of grated Parmesan cheese over the top and a pinch of garlic powder and cayenne for an extra zing. Stir and eat. Serve with a salad.

Low-Fat Veggie and Ricotta Pizza

Make a quick and low-fat pizza as the main dish in this easy meal idea for one person inspired by a recipe from FitnessMagazine.com. Purchase a pizza crust, a small tub of low-fat ricotta cheese and pizza sauce. Heat the oven to 450 degrees Fahrenheit. Spoon out 1/4 cup of pizza sauce and spread it using the back of a spoon. Place small dollops of ricotta cheese on top. Add additional toppings depending on what you have in the kitchen such as sliced onion, mushrooms, sliced ham or leftover chicken. For extra flavor, drizzle balsamic vinegar, olive oil, garlic powder, Parmesan cheese and basil over top.
