Variety may be the spice of life, but finding new meals that your kids will really like isn't always easy. Include a favorite food at each meal, introduce new foods to your kids one at a time and try new foods more than once, advises the Michigan Department of Community Health. Encourage your child to be involved in meal planning, shopping and preparation.
Pizza Soup
Place 4 cups of vegetable broth in a large saucepan. Add one 15-oz. can of pizza or pasta sauce and 2 tbsp. Italian seasoning. Add your child's favorite pizza toppings, such as pepperoni, Canadian bacon, fresh or canned mushrooms, sliced black olives or green peppers. Simmer the soup for 15 to 20 minutes, and then add a sprinkle of grated Parmesan cheese. Serve pizza soup with garlic bread or bread sticks.
Southwestern Salad
Place 2 cups shredded, cooked rotisserie chicken in a non-stick frying pan. Add the liquid from one 11-oz. can of southwestern corn and 2 tbsp. taco seasoning mix. Cook for two to three minutes, or until heated through. Arrange large lettuce leaves on a platter. Top the lettuce with the hot chicken mixture, then sprinkle the canned corn, 1 cup of corn or tortilla chips, 1/2 cup of ranch or French dressing and 1/2 cup shredded Mexican cheese blend over the chicken mixture. Serve the salad with salsa on the side.
Pasta and Spinach
Place 1/2 lb. of ground turkey or lean ground beef in a non-stick skillet and cook until the meat is no longer pink. Stir in a jar of pasta or spaghetti sauce, 1/2 lb. chopped, cooked spinach and 1 lb. of cooked pasta. Heat until the pasta is warm. Serve the pasta with whole wheat bread and a tray of your child's favorite fresh vegetables.
