Metabolic acidosis occurs when your body fluids have too much acid or when your kidneys do not remove sufficient amounts of acid from your body. People with uncontrolled diabetes, kidney disease, severe diarrhea or dehydration, or lactic acid build up are at risk for metabolic acidosis, with symptoms such as rapid breathing, confusion, lethargy, kidney stones, shock or even death. Prolonged acidic diets can also wear down your body's pH balance, and lead to metabolic acidosis and other problems.

Fat and Oil

Most fats and oils are acidic, including avocado, canola, corn, hemp seed, flax, lard, olive, safflower, sesame and sunflower oils.

Grains

Grains are acidic, and include rice, wheat, amaranth, barley, buckwheat, corn, rolled oats, quinoa, rye, spelt, kamut and hemp seed flour. Any food made from these ingredients--such as pasta--will also be acidic.

Dairy

Dairy products from any animal are acidic. All milk, butter and cheese products are acidic.

Nuts and Butter

All nuts are acidic, and roasted nuts are especially acidic. Acidic nuts or nut butters include cashews, brazil nuts, peanuts, pecans, tahini and walnuts.

Animal

Meats that have an acidic effect on the body include beef, lamb and pork. Seafood such as carp, clams, lobster, muscles, oysters, salmon, shrimp, scallops and tuna are acidic. Game meats such as venison, turkey and rabbit are acidic. Eggs, too, are acidic.

Sweets and Condiments

Some condiments, as well as all spices and sweet foods, are acidic. Candy, cocoa and chocolate, pastries, soda and soda water, jams, jelly, marmalade, ketchup and tapioca are acidic. White and brown sugar, salt, pepper, ginger, curry and other spices are acidic.

Alcohol

Alcoholic beverages are acidic. Alcoholic drinks like beer, spirits, liquor and wine have acidifying effects on the body.

Vegetables

Many beans and legumes are acidic. Lentils, brussel sprouts, peeled potatoes, rhubarb and all dried beans are acidic. Black, chick, green, kidney, lima, pinto, red, soy, garbanzo and white beans are acidic. Soy, rice and almond milk are acidic.

Fruits

Some fruits are acidic. Acidic fruits include all preserved or jellied fruits, canned fruits sweetened with sugar, blackberries, cranberries, prunes, dried or sulfured fruits, glazed fruits, bananas with green tips, cranberries, olives, sour cherries, pickled fruits and many green fruits.
