A few simple dessert recipes can make life easier, and kids can look forward to an occasional sweet treat. Miniature Cheesecakes
Miniature cheesecakes are a simple, no-bake dessert. Line a muffin tin with paper liners and place a cookie in each muffin cup. Mix a package of instant cheesecake according to the package directions. Spoon the mixture into each muffin cup, then chill. Alternatively, fill the muffin cups with vanilla, lemon or chocolate pudding. Top the miniature cheesecakes with fresh or frozen fruit or chopped nuts.
Banana Smoothie
Nutritious banana smoothies only take minutes to make, and are a tasty after school or summertime snack. To make smoothies, blend a frozen banana with yogurt and a liquid such as orange juice or lemonade. Add a handful of fresh or frozen fruit such as strawberries or blueberries, then blend the mixture until smooth.
Dessert Nachos
Kids of any age will love snacking on dessert nachos. Begin by brushing melted butter on a flour tortilla, then use a knife or pizza cutter to cut the tortilla into nacho-shaped wedges. Sprinkle sugar and cinnamon over the nachos, then lay the wedges on a foil-covered baking pan. Broil the nachos until they're golden and crisp. Drizzle fruit yogurt over the nachos, then top with fresh strawberries and chopped nuts.
Peach Crisp
Peach crisp is an old-fashioned comfort food that kids will enjoy. Spread two cans of drained peaches in a buttered dish. Mix two packages of uncooked cinnamon-flavored instant oatmeal with enough flour and melted butter to make a crumb topping. Sprinkle the crumb topping over the peaches. Bake the peach crisp until golden brown, then serve warm with ice cream.
