Consumpton of olive oil can raise HDL cholesterol while lowering LDL cholesterol, which is associated with cardiovascular disease. Olive oil can also benefit skin health, as it is rich in antioxidants and vitamin K, which help combat the effects of aging and help protect skin from environmental hazards such as UV rays.
