Potassium is an important nutrient that your body depends on for proper organ, tissue, muscle and cell function. When your kidneys do not work properly, potassium levels become elevated in the body and a condition known as hyperkalemia can take place. Following a low potassium diet will help you treat this condition.

Vegetables

Vegetables are all high in water content, fiber and numerous minerals. They are also low in fat and protein. Alfalfa sprouts, green beans, lettuce, cucumbers, eggplant, parsley, rhubarb, radishes and mushrooms are all low potassium vegetables. Be aware, however, that if you eat a high amount of these, your potassium intake will be elevated.

Fruits

Fruits contain a high amount of natural sweetness, and they are also high in fiber and complex carbs. Low potassium fruits include plums, raspberries, blueberries, tangerines, grapes, cranberries, cherries and canned apricots. Fruit is also low in protein and fat.

Dairy Products

Dairy products are high-protein foods that are also high in fat and calories. They contain moderate amounts of carbs and most are high in potassium. Sour cream, swiss cheese and cheddar cheese are exceptions. You can get these in low-fat forms if you are watching your caloric intake.

Grains

Whole grains are high in fiber and complex carbs, and are low in fat. They also have a moderate amount of protein, and most types are high in potassium. Oatmeal and white rice are the only two that are low in potassium. Products that derive from white flour are also low in potassium, including white bread, bagels and buns. Plain pasta is also a low potassium food.

Miscellaneous

A number of miscellaneous items are low in potassium, such as jelly beans, non-dairy creamers and toppings, fruit punch, yellow cake, cookies without chocolate or nuts and coffee. All of these foods are also high in empty calories and low in fiber.
