According to the Celiac Disease Foundation, one out of 133 people are affected with celiac disease. Celiac Disease is an autoimmune condition where those affected have toxic reactions to gluten, preventing food from absorbing properly and causing damage to the small intestine. The only treatment for celiac disease is a gluten-free diet. Gluten is the name for certain proteins found in wheat, barley, rye and triticale. Due to the increased awareness of celiac disease and the need for gluten-free diets, many commercial food companies are offering gluten-free alternatives.
