Cheddar cheese is a semi-hard cheese made from cow's milk. The cheese was first made in a village named Cheddar, in southwest England before the 1100s. Cheddar cheese is a good source of calcium, protein and phosphorus, but it is very high in saturated fat. Eating low-fat cheddar cheese will reduce your calorie intake by a little more than half and reduce your fat intake to a fourth of regular cheddar cheese. The values are based on a 1-ounce serving of cheddar cheese.

Basic Nutrition

One ounce of cheddar cheese contains 113 calories, 9 g of total fat, 29 mg of cholesterol, 174 mg of sodium and 7 g of protein. Based on a 2,000 calorie-a-day diet, these measurements represent 14 percent of the recommended daily value, or DV, for total fat.

Fats

The total fat content is 9 g, which represents a large 14 percent of the recommended daily value. Not only does cheddar cheese represent a large portion of the recommended daily value, it also contain 6 g of saturated fat. This represents 30 percent DV. One ounce provides only 3 g of healthy unsaturated fat. Cheddar cheese contains some heart-healthy fatty acids; 102 mg of omega-3 and 162 mg of omega-6.

Vitamins

Cheddar cheese contains 0.1 mg of riboflavin, which represents 6 percent DV, 281 IU of vitamin A, representing 6 percent DV and 0.2 mcg of vitamin B12, representing 4 percent DV. Other vitamins in cheddar cheese include vitamins D, E, and K. It also contains 5 mcg of folate and 4.6 mg of choline in one ounce.

Minerals

Cheddar cheese is a good source of calcium, with 202 mg, or 20 percent DV in just one ounce and phosphorus with 143 mg, or 14 percent DV. Other minerals include iron, magnesium, potassium, zinc, selenium and fluoride.

Sodium and Cholesterol

One ounce of cheddar cheese contains 174 mg of sodium, representing 7 percent of the daily recommended value and 29 mg of cholesterol, or 10 percent DV.
