Foods High in Copper & Potassium

Copper and potassium are two of several minerals of which the body needs an adequate supply. Potassium serves as an electrolyte in the body, the MedlinePlus website explains, and allows for cellular and electrical functions. The body needs copper in small amounts, meanwhile, to make red blood cells. Both minerals are present in many of the foods we eat. Although many food types provide a good dietary supply for the minerals separately, it is primarily vegetables that contain both.

Green, Leafy Vegetables

Many leafy greens are good dietary sources of both copper and potassium. Swiss chard is the best dietary source for potassium --- with 27 percent of the recommended daily value in a 1-cup serving --- and also contains 14.5 percent of the daily value for copper, according to the World's Healthiest Foods website. Other leafy greens that contain both minerals include spinach, mustard greens, turnip greens and collard greens.

Crimini Mushrooms

Crimini mushrooms are an excellent source of both copper and potassium. The mushrooms contain more copper --- 35.5 percent of the daily value --- but a 5-ounce serving also provides 18.1 percent of the daily value for potassium.

Eggplant

Eggplant is a good dietary source of both copper and potassium. A 1-cup serving has 5.5 percent of the daily value for copper and 7 percent of the daily value for potassium, the World's Healthiest Foods reports.

Squash

Summer squash and winter squash contain both copper and potassium. Both contain 9.5 percent of the daily value for copper, the World's Healthiest Foods calculates. Winter squash contains 25.6 of the DV for potassium, while summer squash has 9.9 percent.

Beans

Several types of beans contain both copper and potassium. Green beans, soybeans, lima beans, kidney beans and pinto beans all contain both minerals, the World's Healthiest Foods reports. Green beans are the best source for both, with 6.5 percent of the daily value for calcium and 10.7 percent of the daily value for potassium in a 1-cup serving.

Tomatoes

Tomatoes are a popular food that provides a good dietary source of both copper and potassium. One cup of ripe tomato has 6.5 percent of the daily value for copper and 11.4 percent of the daily value for potassium, according to the World's Healthiest Foods.
