How to Use Alfalfa Sprouts

Alfalfa sprouts are thin, crunchy sprouts derived from alfalfa seeds. According to Rose Elliot, author of "Rose Elliot's Vegetarian Cookery," these sprouts are abundant sources of B vitamins, protein and vitamin C. Alfalfa sprouts are one of the only plant sources that contain vitamin B12, which is important for protecting nerve endings. These sprouts stay fresh for up to five days when kept moist in a plastic bag and refrigerated.

Step 1

Use alfalfa sprouts in salads. Start with salad greens, and add nuts such as walnut pieces or unsalted pecans. Add raw fruits such as fresh apple slices, orange pieces and cranberries. Mix in fresh vegetables and dressing, then top your salad with a layer of alfalfa sprouts.

Step 2

Top veggie burgers with alfalfa sprouts in place of lettuce. Alfalfa sprouts add texture and flavor to homemade or commercially prepared veggie burgers. Top the layer of alfalfa sprouts with tomatoes, onions, peppers or other fresh vegetables.

Step 3

Place fresh, peeled fruits in a blender with ice and soy milk. Add a handful of alfalfa sprouts to benefit from their nutrients. Blend until smooth and enjoy as a smoothie.

Step 4

Top a baked potato with alfalfa sprouts. Sprouts can be used in place of cheese, broccoli or other common baked potato toppings.

Step 5

Mix alfalfa sprouts in stir fry dishes in place of mung bean sprouts. Prepare the stir fry dish, then add the sprouts after cooking to retain their taste, texture and nutrients.
