Elderberries have long been known for their antioxidant benefits. They can help to lower cholesterol levels, improve heart health and vision, boost the immune system and most notably, help fight off colds and flus. The extract can be used to help prevent and improve cold and flu symptoms, and can also be made into syrups to top off foods and desserts.
Instructions
Step 1
Put your elderberries into the glass jar. Try not to fill more than two-thirds of the way full.
Step 2
Pour the vodka into the glass jar until your berries are completely covered.
Step 3
Cover the jar opening with plastic wrap and tightly secure the lid over the plastic wrap. This will help to prevent contamination.
Step 4
Gently shake jar to combine contents and place in a dark, cool, place for 4 to 6 weeks. You will need to shake the jar every few days.
Step 5
After 4 to 6 weeks, using your sieve lined with cheesecloth, strain the berries into another glass jar or container. Once all of the liquid has passed through the sieve, tightly squeeze the cheesecloth containing the berries to be sure you have extracted all of the liquid possible.
Step 6
Store the extract tightly sealed in a cool dark place. Properly stored, the extract can last up to 3 to 5 years.
Tips and Warnings
- The berries can be strained after 4 to 6 weeks or can be left long to produce a stronger extract. Try adding honey, ginger, or cinnamon to offer subtle taste varieties. While a cheap variety of vodka is typically used, brandy or gin can be substituted as well.
- Be sure to discuss use of this product with your doctor to determine appropriate use and dosing.
