How to Eat Pasta on a Low-Carb Diet

Some people do not like the taste of pasta. Others love it, but cannot eat it for health reasons, such as diabetes or obesity. If you are in the latter group, you should be happy to know you can still have pasta while remaining on a low-carb diet. Certain pasta dishes can offer you freedom from worry about eating too many carbs, as can certain types of pastas.

Step 1

Cook vegetables with your pasta to cut down on the amount of pasta on your plate. Vegetables, such as Swiss chard, broccoli, cauliflower, eggplant, mushrooms, peas and zucchini are low in carbohydrates (between 4 and 7g per cup), and they add excellent flavor to pasta. Saute two cloves of sliced garlic in 2 tbsp. of olive oil, along with some Swiss chard, broccoli or mushrooms and mix with penne. You can combine these vegetables, if you wish. To make another pasta and vegetable dish saute half a chopped onion in 2 tbsp. of olive oil along with peas or cauliflower to cut down on carbs. Another way to make pasta and vegetables is to fry some eggplant and mix the eggplant with a little pasta and tomato sauce. Experiment with other vegetables you think would taste good with pasta to discover additional low-carb pasta dishes.

Step 2

Brown 6 oz. of chopped meat in 1 tbsp. of olive oil and add a sliced garlic clove to the pan. When the meat is cooked, drain off any excess oil and add a medium can of tomato sauce and a 1/4 tsp. of oregano to it. Simmer for 10 to 15 minutes and serve over the cooked pasta of your choice. The meat in the sauce will fill you up without having to consume a lot of carbs from the pasta. Make spaghetti and meatballs for another low-carb pasta dish.

Step 3

Melt 1 tbsp. of butter and three slices of American cheese in a pot and add a little milk to it to make a cream sauce. Add cooked broccoli or chopped tomato to the sauce and simmer for about four minutes. Pour the sauce over a small portion of pasta.

Step 4

Cook low-carb pasta, such as multigrain pasta that contains more protein and lower carbohydrates than traditional pasta. You can make pasta dishes using this low-carb pasta and add vegetables or meat to it to make the dish even lower in carbohydrates. Saute sliced garlic in oil and add some spinach pasta to it. Spinach pasta is low in carbs compared to regular pasta.
