Protein powders offer a simple, convenient way to get a lot of high-quality protein into your diet. Most often mixed with water, protein powder is available in a variety of flavors and commonly made from whey, soy or egg whites. While you probably usually blend protein powder into a shake or smoothie, you can also use protein powder in recipes, like blueberry oatmeal pancakes. The result is more far more palatable.

Step 1

Put the oats in the blender or food processor. Blend or process the oats until no large grains remain and the mixture looks like course sand.

Step 2

Add the protein powder, baking soda, sweetener, and cinnamon. Blend or process until well mixed.

Step 3

Add the egg whites and water. Blend or process the mixture for 30 seconds, or until it is mixed well. Pour the batter into a bowl and gently fold in the fresh or frozen blueberries.

Step 4

Heat the griddle or fry pan over low to medium heat. Coat the pan with non-stick cooking spray. Drop 1/2 cup of batter into the pan and cook about three minutes on each side, or until golden brown.

Step 5

Fold two paper towels onto a plate and place the cooked pancakes on top. The paper towels will soak up any remaining cooking oil. Put the pancakes on a plate and top with a dollop of your favorite topping, such as sugar-free maple syrup, fat-free cool whip, or non-fat yogurt.
