The Atkins Diet is an eating program developed by Dr. Robert Atkins in 1972. Going against the methodology of many other programs, the Atkins Diet emphasizes the restriction of carbohydrates and places a heavy emphasis on fat and protein, primarily fat. The purpose of this is to bring the body into a state known as ketosis, where fats are burned rather than carbohydrates. Some carbohydrate intake is allowed, but it is kept low to aid in bringing the body into ketosis. Concerning calorie count, the ideal number varies between individuals, but does not require starvation as some other diets do. The unorthodox foods eaten during the Atkins Diet contain only trace carbohydrates and are packed with healthy fat and protein.
Fish
Most types of fish are high in protein and contain no carbohydrates. Flounder, salmon, herring, sardines, and tuna are some of the fish that can be eaten on the Atkins Diet. Other types of seafood, such as clams, shrimp, and squid, are also allowed. The consumption of oysters should be limited because they have higher carbohydrate levels.
Poultry
Chicken, duck, goose, quail, and turkey are all acceptable poultry sources. Although most poultry works with the Atkins Diet, always check the package for any sugar sources or carbohydrates before purchasing. Avoid foods with more than trace carbohydrate amounts.
Meat
Fresh meat such as beef, lamb, pork, venison, and veal are all high in protein, and can be consumed on the Atkins Diet. Bacon and ham may also be eaten. However, because processed meat often contains higher amounts of carbohydrates and sugar than fresh meat, it is best to avoid them.
Eggs and Cheese
Eggs prepared in any fashion are acceptable Atkins foods. They provide healthy fats and serve as an excellent source of protein. Although cheese contains trace amounts of carbohydrates, it is acceptable to eat cheese on the Atkins Diet. Limit your intake to only a few slices per day. Parmesan and cheddar contain extremely low amounts of carbs and should be your primary cheese sources.
Vegetables
Vegetables contain only trace amounts of carbohydrates. They are acceptable primarily because of the many health benefits that they carry. Atkins followers are encouraged to eat vegetables of all kinds daily. Certain vegetables including cabbage, okra, cauliflower, onions, spinach, and tomatoes are higher in carbohydrates and should be measured when eaten.
Oil and Condiments
Cooking oils that are acceptable on the Atkins Diet include olive oil, canola oil, peanut oil, and safflower oil. They are all high in healthy fats and contain no carbohydrates. Butter and low-sugar mayonnaise also fall into this category.
Liquids
Cream, coffee, tea, water, and diet soda are all acceptable.
