Step 1
Add any moist or oil-containing ingredients first, such as butter, eggs, nuts, liquids or flavoring extracts, and stir them into the tempered chocolate. Tempering chocolate makes it glossy and helps to prevent fat bloom, or separation, caused by the cocoa butter content, according to the chocolate manufacturer, Lindt.
Step 2
Measure the protein powder for the recipe. Reduce a dry ingredient in the recipe, such as flour, by the amount of protein powder you add. For example, if you're adding 1/3 cup of protein powder, subtract 1/3 cup of flour. This will help keep the texture and moisture balance of the recipe consistent.
Step 3
Stir the tempered chocolate gently. Sprinkle the protein powder out of the measuring cup into the tempered chocolate while continuing to stir the tempered chocolate slowly. Alternatively, add multiple dry ingredients, including protein powder by placing them in a sifter or sieve. Sift slowly or use a spoon to stir the ingredients in the sieve to sprinkle into the tempered chocolate. Tips and Warnings
- Use the smallest amount of protein powder for your needs, to help avoid affecting the texture of the recipe too much. Use vegetable oil or cocoa butter to moisten tempered chocolate. Avoid using water, butter, or margarine -- which contain water -- unless the recipe calls for them, as the water will change the chocolate texture.
