"Eat to Live" refers to the book and diet plan by Dr. Joel Fuhrman. Those who follow his plan call themselves nutritarians because the diet focuses on eating the most nutrient-dense food possible. Fuhrman redesigned the traditional U.S. Department of Agriculture Food Guide Pyramid so that fruits and vegetables become the mainstay of the diet while meat, dairy and processed foods are frowned upon. Fuhrman claims his way of eating leads to quick weight loss because your body functions very efficiently when fed a highly nutritious diet. Fuhrman also claims his way of eating reduces your risk of contracting major diseases like cancer, heart disease and diabetes.
Step 1
Try to eat at least 1 lb. combined of green and raw vegetables each day. Start each meal with a large salad. A popular mantra from the book is that "salad is the main course."
Step 2
Eat a minimum of four servings of fresh fruit daily. Avoid processed fruits like dried fruits or fruit juices.
Step 3
Limit your intake of starchy vegetables such as winter squash, corn and potatoes to 1 cup per day. Substitute your starchy vegetable for 1 cup of whole unprocessed grains if you like.
Step 4
Avoid all processed foods and animal products. This includes all meat and dairy products, which Fuhrman believes are high in chemicals, hormones and saturated fats. Eat fish rarely if you feel you must have some animal products in your diet; otherwise, avoid fish as well.
Step 5
Eat foods high in good fats daily, but in limited amounts. For example, eat 1 oz. of nuts, 1 tbsp. of ground chia or flax seeds, or one serving of fresh avocado per day.
Step 6
Do not consume any salt or sugar while on the plan.
