A report by the Centers for Disease Control and Prevention stated that only 23 percent of meals Americans consume include a vegetable. In addition, only 26 percent of American adults eat vegetables three or more times a day. There is little doubt that most Americans should be consuming more fruits and vegetables in their diet. While most would benefit from simply incorporating more fruits and vegetables into their diet, others choose to follow a raw food diet. A diet consisting of only fruits and vegetables is often used as a short-term method to rejuvenate and restore the body to a healthier condition.

Nutrient Density

Fruits and vegetables are nutrient-dense foods. In addition to containing vitamins and minerals, fruits and vegetables contain fiber, which helps weight loss. To lose weight, you must eat fewer calories than you expend. According to the Centers for Disease Control and Prevention, the water and fiber present in fruits and vegetables allows individuals to consume the same volume of food but with fewer calories when eating only fruits and vegetables.

Phytonutrients

Fruits and vegetables have high levels of phytonutrients, which include antioxidants. They occur naturally in plants. Plants produce phytonutrients to protect bacteria and viruses, but they help the human body as well.

Diets rich in fruits and vegetables may reduce the risks of cancer and other chronic diseases because of their naturally high level of antioxidants. Phytonutrients are also what give fruits and vegetables their brilliant color.

Enzymes

Enzymes are proteins that are needed for most chemical reactions to take place in your body. They are often described as the "life force" in the human body. While your body creates enzymes, you may also consume enzymes from raw fruits and vegetables.

No Cholesterol

Cholesterol is a fatty substance found only in animal food products. Consuming a diet high in cholesterol is harmful to your health. Excess low density lipoprotein cholesterol circulating in your body may build up inside arteries and cause atherosclerosis, which may lead to a heart attack or stroke. A diet of only fruits and vegetables will not contain any cholesterol. The human body makes all the cholesterol it needs.

Low Saturated Fat

Saturated fat is commonly found in animal products as well. Very few fruits contain saturated fat, and the fruits that do, such as coconut oil, many health advocates claim are still good for you. Consuming a diet high in saturated fat contributes to clogged arteries and heart disease.
