There are many claims that have been made throughout the years about the specific benefits of an ACV diet, including a book written in 1958 by D. C. Jarvis, M.D. entitled Folk Medicine, explaining some of the "Old wives tales" surrounding the use of ACV as a tonic. However, in recent years, research studies have been done to support some of his theories.

Heart Health

Apple cider vinegar, ACV, has been shown in studies to reduce cholesterol according to an article presented at the 59th Annual Meeting for the Japanese Society of Nutrition and Food Science. ACV is also known to contain high levels of potassium, need for healthy musculature and balancing sodium levels. Magnesium is also found in ACV, which helps relax the walls of blood vessels, leading to lower blood pressure.

Metabolism

Researchers from the Mizkan Group of Japan noted a 10 percent fat reduction in animals supplemented with a 5 percent solution of acetic acid, an ingredient found in ACV. Findings published in the Journal of Agricultural and Food Chemistry, noted that the genes responsible for fatty acid oxidation and heat generation, burning of fat, were activated when acetic acid is ingested.

Gastro-Intestinal Health

Shown to help with the digestion of meals, ACV is also known to act as an antimicrobial. ACV is linked to organ health, more specifically, the intestines, kidneys, liver and bladder by removing harmful bacteria build-up. ACV is also shown to reduce the possibility of food poisoning due to bacterias such as Salmonella and Yersinia because of ACV bactericidal activity.

Nutrient Content

ACV is also rich in essential vitamins and minerals not produced naturally by the human body. Magnesium, manganese, potassium, zinc and iron are only just a few of the minerals found in ACV. ACV is made from apples, yet it is not pasteurized or filtered. The fermentation process produces enzymes and organic acids that are found to be important elements of ACV health benefits.

Cancer Prevention

Apple cider vinegar also contains substances thought to prevent against certain types of cancer. Beta-carotene, a powerful antioxidant along with flavonoids and polyphenols, found in apples and ACV, also have cancer protective properties. A solid soluble fiber called pectin that binds some cancer causing compounds in the colon and speeds its elimination from the body, is also found in ACV.
