The Budwig Diet was created by German biochemist Johanna Budwig. Johanna Budwig was a pharmacologist, chemist and physicist with a doctorate in physics and she worked as the chief expert-consultant for Bundesanstalt fur Fettforschung, the Federal Institute for Fats Research, as mentioned at BudwigCenter.com. The Budwig Diet focuses on the incorporation of health promoting ingredients to support vitality, while eliminating imbalances that can promote disease, by avoiding harmful ingredients and hard-to-digest foods.

Step 1

Blend 3 tbsp. of flaxseed oil with 6 tbsp. of a low fat organic cottage cheese. Mix these ingredients together with a hand-held electric blender for one minute. If the mixture becomes too thick or if the flaxseed oil is separate from the cottage cheese, add an additional 2 to 3 tbsp. of goats milk. Mix until all ingredients are combined and create a rich, creamy, whipped texture.

Step 2

Grind up 2 tbsp. of whole flaxseeds in a coffee grinder, then add it to the flaxseed oil and cottage cheese mixture. Mix the ground flaxseeds into the creamy mixture so all ingredients are combined equally.

Step 3

Add 1 tsp. of raw, non-pasteurized honey by hand or with the electric blender to fully incorporate all the ingredients.

Create variety by adding sugar-free apple sauce, cinnamon, lemon juice, chopped almonds or walnuts, pine kernels or hazelnuts as desired for texture and flavor. Use this Budwig Muesli mixture as a main staple meal of the Budwig Diet.

Step 4

Eat raw vegetables for lunch and dinner, with a salad of flax oil dressings only. Create salads with turnips, carrots, white radishes, kohlrabi, spinach and kale. Sip on black or green organic tea with lunch.

Step 5

Get out into natural sunlight for 45 minutes to one hour each day, suggests the Budwig Center. If the body has the right balance of oils and proteins, it has a magnetic field which attracts the photons in sunlight and can promote the healing powers of the sun to support the body, according to Budwig's theories, which have not been studied in clinical trials.

Tips and Warnings

  • Do not add water or juices when blending flaxseed oil with cottage cheese. Any kind of fresh fruit and vegetable is permitted, the majority of which is to be eaten raw. White regular pasta is eliminated, as is white bread. Spelt pasta and bread is preferred over wheat. Corn is discouraged because of mold and genetic modification issues. No ice cream or dairy products should be eaten other than cottage cheese. No cane sugar, white sugar, molasses, maple syrup, Xylitol, or preservatives should be consumed; only honey, stevia should be used. Avoid processed foods and soy products, unless the soy is fermented. Avoid pesticides and chemicals, even those in household products and cosmetics. Vinegar can be used as a household cleaner.
