The term "breakfast in bed" brings visions of luxury and delicious, calorie-laden dishes. An occasional breakfast in bed can be incorporated into a healthy lifestyle, however, making the recipient feel both pampered and cared for. Serve these meals on a special tray along with a fresh flower, using the best dinnerware, silverware, glasses and napkins available. A hand-written note adds a personal touch.
Mushroom Omelet
Prepare a healthy mushroom omelet by sauteeing 1/2 cup of mushrooms in a non-stick skillet along with 1 tsp of margarine or olive oil. Remove the mushrooms from the skillet when lightly browned and add a scrambled mixture of 1 whole egg and 3 egg whites into the skillet. Cover the skillet with a lid and allow the eggs to set, then carefully turn the egg mixture over with a spatula. Allow the eggs to cook briefly before adding the mushrooms to the center and then flipping the omelet from side to side until it is done. Serve the omelet with a slice of whole-grain toast, a grapefruit half and a glass of skim milk.
Whole-Grain Cereal
For a simple, healthy breakfast in bed, consider a bowl of whole-grain cereal with skim milk. The American Diatetic Association suggests topping the cereal with fruit. Sliced fresh strawberries add color, taste and nutrition to this otherwise ordinary dish, making it worthy of serving on a special occasion. Add hot cocoa made from dark chocolate for a luxurious but easy-to-prepare meal.
Waffles
Prepare frozen multi-grain waffles according to the instructions on the box, and top them with fresh blueberries and a sprinkle of confectioner's sugar. Serve the waffles with heated genuine maple syrup, a veggie sausage link and a glass of skim milk.
Egg Sandwich
Purchase a loaf of healthy, gourmet bread from a local bakery. Cook an egg in a non-stick skillet or on a griddle along with 1 tsp of margarine. Place the egg between toasted bread slices along with sliced tomato and a sprinkle of basil. Cut the sandwich in half and serve it with a small dish of Greek yogurt and a glass of pineapple juice.
Muffin
Prepare a special muffin by adding chopped maraschino cherries and chopped walnuts to a store-bought muffin mix. Bake the muffin until nicely browned and serve it with a pat of margarine, a scrambled egg and a cup of coffee.
Cottage Cheese
For breakfast in bed for a child, consider cottage cheese. The Utah Department of Health suggests making nutrition fun for kids, and this colorful dish manages to do this. Add raspberries, dark chocolate chunks, pecans and a few colored miniature marshmallows to a double serving of low-fat cottage cheese and serve it with grape juice.
