Black vinegar, made from white rice, appeared on the Japanese market in 2000, and at that time, the health benefits were largely unknown. Koji Ishigaki, a marketing official for the vinegar manufacturer Mizkan, says scientists recently have proven that the ingredients in black vinegar may help combat lifestyle-related health problems. Black vinegar is considered to be more beneficial for your health when its been aged a few years.

Lowering High Blood Pressure

Acetic acid, the main component in black vinegar, has been shown to help prevent disease and promote longevity. One specific benefit of black vinegar is its help in lowering blood pressure. Trends in Japan suggest drinking only 15 milliliters a day can aid in the lowering of chronic high blood pressure.

Gives You Energy

The Austin Chronicle column "To Your Health" says black vinegar is a rich source of citric acid, a compound essential for energy production at the cellular level. It is also the precursor to the citric acid cycle, which gives us energy for almost everything we do. The citric acid found in black vinegar could potentially increase your energy levels.

Promotes Secretion of Saliva

Trends in Japan says black vinegar can promote the production of saliva, which is necessary for digestion. Saliva is essential for gathering food that has been chewed into a small ball so it can easily be swallowed. It also helps to lubricate the esophagus so food can easily be transferred from the mouth to the stomach.
