Organic raw vinegar can be made from several plant sources, but organic raw apple cider vinegar is the most common in the U.S. Organic raw vinegar is not filtered, distilled or pasteurized. Made from organic apples, grown without any chemical fertilizers or pesticides, it undergoes fermentation twice. The initial fermentation changes the sugars in the cider into alcohol, and the second fermentation changes the alcohol into acetic acid. Organic raw cider vinegar retains the "mother vinegar," an active culture that is rich in enzymes and nutrients. The mother settles to the bottom as sediment. Shake the bottle well before using organic raw vinegar to redistribute the beneficial mother throughout the liquid.

Insulin Sensitivity

The American Diabetic Association published results of a study that tested apple cider vinegar's effect on insulin after test subjects ate a high-starch meal. The controlled study used a non-diabetic control group and insulin-resistant, or type 2 diabetic subjects. The study found that vinegar had significant effects on insulin sensitivity, enough to warrant further studies.

Weight Loss

Organic raw vinegar is sometimes used as a weight loss aid. The website Apple Cider Benefits recommends drinking 2 tsp. vinegar mixed in an 8 oz. glass of water before each meal. You may add organic honey or stevia to improve the taste, if desired. There are several theories as to how vinegar helps with weight reduction. Vinegar can be an appetite suppressant, improve your mood, aid in digestion or decrease water retention. It also is thought to speed up metabolism.

Constipation or Diarrhea

Raw organic cider vinegar helps regulate your digestive system. It works to relieve both constipation and diarrhea. Home Remedies Web explains that the acetic acid balances acid levels in the stomach, easing digestion. Raw organic vinegar contains pectin, a water-soluble fiber from the apples. Pectin soothes and stabilizes the intestine, whether the problem is constipation or diarrhea. Acetic acid can have an antibacterial effect against the bacteria that are often the cause of common diarrhea.
