Vitamins are water soluble or fat soluble. There are 13 vitamins in total, 9 of which are water soluble and 4 of which are fat soluble. Vitamin K is a fat-soluble vitamin, which means it gets stored in the fat cells of the body. Its main function in the system is to promote blood clotting. Some medications can interact with foods that cause blood clotting. Vitamin K foods are examples of these.
Greens
Leafy salad greens are high in water content and fiber and low in carbs. They have a high level of vitamin K. Kale, collards, spinach, mustard greens, parsley, all types of lettuce, endive, turnip greens, and beet greens are all examples of these. Kale has approximately 1,147 mcg per cup, cooked spinach has about 900 mcg per cup, and boiled collards have approximately 1,060 mcg per cup.
Cruciferous Vegetables
Broccoli, brussels sprouts, and cabbage are all cruciferous vegetables that are high in fiber, phytochemicals, and vitamin K. Cabbage has approximately 73 mcg per cup, broccoli has about 90 mcg ,and brussels sprouts have approximately 300 mcg per cup. Asparagus, okra, peas, and onions are examples of other vegetables that contain vitamin K.
Spices
Spices are used to add flavor to bland foods; some types contain vitamin K. Examples of these include marjoram, oregano, thyme, basil, celery flakes, and coriander.
Miscellaneous
Fruits are high in water content, fiber, and natural sugar. Some fruits also have vitamin K. Plums and prunes are two examples of these. Liver is also a good source of vitamin K. Fish oil, enriched egg noodles, and bread crumbs have small amounts of vitamin K.
