How to Test for Vitamin C in Fruit and Vegetables

Vitamin C is also known as ascorbic acid. According to the Mayo Clinic, Vitamin C is a water-soluble vitamin that helps the body form muscles, collagen, blood vessels and bones. It also aids in the absorption of iron in the body. Vitamin C can be found in fruit and vegetables, particularly citrus fruit such as oranges. If you would like to test fruit and vegetables to determine if Vitamin C is present, a test can be done at home.

Step 1

Process the fruit or vegetable that you want to test in a juicer. If you want to test numerous items, juice them separately, being sure to thoroughly clean the juicer in between each use.

Step 2

Pour one ounce of the juice into a plastic cup. If you have juiced more than one fruit or vegetable, pour each juice into separate cups.

Step 3

Drop 10 drops of the starch solution into the plastic cup with a pipette and stir it with a toothpick. If you do not have a pre-made starch solution, you can make one using one part baking soda and five parts water.

Step 4

Drop one drop of iodine into the cup and stir it for 20 seconds, observing if there is a color change. When the color change is clear, you have confirmed the presence of Vitamin C.

Step 5

Record the number of drops of iodine used. This will allow you to compare each fruit or vegetable with one another, and rank them according to the amount of Vitamin C present.
