If you enjoy fluffy bread, you can thank yeast for the airiness. Without yeast to help it rise, bread is nothing more than a hard, flat cake. According to Baking 911.com, the yeast consumes the sugar in your recipes in a process known as fermentation. The fermentation process produces alcohol and the carbon dioxide gas responsible for making the dough rise. Fruit juices, such as apple juice and orange juice concentrates, contain fructose and glucose--perfect substitutes for those looking to reduce the amount of white sugar in their diet. Substituting apple juice for sugar requires just a few tweaks to your favorite yeast bread recipe.

Step 1

Read the recipe and jot down the suggested amount of sugar using a pen and paper. Writing the conversions down on paper will reduce the chances of error.

Step 2

Convert the sugar measurement into the apple juice measurement, which is 3/4 cup of apple juice concentrate for every 1 cup of sugar, according to Allrecipes.com. So, if your yeast bread recipe calls for 2 cups of sugar, substitute 1 1/2 cups of apple juice concentrate for the sugar in your recipe.

Step 3

Decrease the amount of liquids in your yeast bread recipe by 3 tbsp. when substituting apple juice for sugar. For instance, if your recipe calls for 1 cup of milk, reduce this number by 3 tbsp., keeping in mind that there are 16 tbsp. in 1 cup.

Tips and Warnings
