German born Walter Kempner developed the Rice Diet after working with the Duke University Department of Medicine, located in North Caroline. According to Every Diet, Kempner started working at Duke in 1943, with the main goal of determining the link between diet and disease. After significant research, Kempner developed a diet consisting primarily of rice, juices and fruits. The Rice Diet helps patients suffering from chronic diseases to maintain a healthy body weight.

Serving Size

One of the key secrets to having success with the Rice Diet involves following the recommended serving sizes. The Rice Diet illustrates the serving sizes for the components of the diet, including fruits, vegetables, dairy products and starches. Every Diet states that one medium sized fruit, including an apple or orange, counts as one serving. One serving of fruit also includes 1/2 of a banana or 1 cup of chopped fruits. The Rice Diet requires you to eat three solid meals each day. For the first day of the Rice Diet, eat two servings of fruit for breakfast, lunch and dinner. One servings of starches consists of 1/3 cup of cooked rice, a slice of whole grain bread or 1/2 cup of pasta. The Rice Diet suggests that you eat two servings of starches for each meal, on the first day of the diet.

Daily Menu

Another secret for the Rice Diet involves following the daily menu. The Rice Diet menu actually changes after the first day of the diet. According to the Rice Diet, phase two of the rice diet combines a mix of whole grains, fruits and vegetables. Phase two spans from the second to the seventh day of the Rice Diet. According to Every Diet, the recommended breakfast for phase two consists of one serving of starch, one serving of fruit and one serving of non-fat dairy products. One serving of dairy in the Rice Diet includes 1 cup of milk or yogurt, and 1/2 cup of cottage cheese. Lunch and dinner in phase two call for three servings of starches and vegetables, with one serving of fruit.

Low Sodium and Fat

The secret of the Rice Diet's success centers around its restriction of both high sodium and fatty foods. Salty foods, when combined with water, cause your body to swell. According to Every Diet, an average person's daily diet contains around 4 to 7g of sodium. The human body can maintain a proper function with little more than 1/2g of sodium everyday. Lowering your intake of salt can to lower your blood pressure as well as increase kidney function. The Rice Diet also restricts the amount of fat you can consume on an everyday basis. The Rice Diet calls for 5g of fat or less in your daily menu.
