Breakfast on the South Beach Diet should consist of high-protein foods instead of foods with high carbohydrates, such as doughnuts, waffles or pastries. The South Beach Diet has three phases, and which phase of you are in determines what types of foods are recommended for breakfast.

Phase 1

No fruits are allowed in the first phase of the South Beach diet. Breakfast can include eggs, vegetables and condiments. A southwestern breakfast can be made by scrambling two eggs with a low-fat cheese and adding 2 tbsp. of salsa on the top after cooking. Another option is to pour egg whites or egg substitute into a muffin pan and add spinach, peppers or asparagus to make a miniature breakfast quiche. SouthBeachDiet.com suggests combining artichokes, Canadian bacon, eggs and the South Beach Diet's Mock Hollandaise Sauce to make a diet-friendly type of eggs Benedict.

Phase 2

After the first two weeks in Phase I, dieters move on to Phase 2, which introduces fruits and starches back into the diet. Breakfast in Phase 2 can now include yogurt. The yogurt must be light, low-fat, fat-free or plain. Plain yogurt can include a serving of fresh fruit. Almost any type of fruit is permitted, with the exception of bananas, watermelon, raisins, pineapple or any canned fruit or fruit juice. A high-fiber cereal, a whole-grain bagel or a sugar-free bran muffin are also options for breakfast in Phase 2.

Phase 3

The final phase of the South Beach Diet is Phase 3. Phase 3 is a maintenance diet that allows all foods back into the diet, but in moderation. Occasional meals of chocolate chip pancakes, french toast or a glazed doughnut are allowed. Using whole-grain bread for french toast and replacing the powdered sugar with fresh strawberries makes the dish more South Beach Diet friendly. Breakfast dishes from Phase 1 and 2 can be included for variety while on Phase 3.
