The Carbohydrate Addict's Diet is a diet plan that Dr. Rachael Heller designed in the 1990s. The Carbohydrate Addict's Diet balances meals with protein, vegetables and good carbohydrates. It is less restrictive than other low-carb diets and allows a daily "reward" meal when you may eat the foods forbidden at other times. During the reward meal, you can eat any vegetables you like, including high-carbohydrate vegetables such as potatoes, sweet peas, broccoli, corn and some types of beans. At all other meals, you should consume only lower-carbohydrate vegetables.
Lettuces
All forms of lettuce, including spinach and romaine, are allowed on the Carbohydrate Addict's Diet. Salads with lean protein, such as chicken, are acceptable lunches while following this diet. You may also use lettuce in place of high-carbohydrate buns for sandwiches. Avoid iceberg lettuce and choose lettuce varieties that are higher in fiber to help you feel full longer.
Cruciferous Vegetables
Cruciferous vegetables, such as cauliflower and cabbage, are permitted on the Carbohydrate Addict's Diet. You may also choose other cruciferous vegetables, including Brussels sprouts, radishes, kale, bok choy, collard greens and turnips. Broccoli is also cruciferous, but is not allowed on this diet except during reward meals.
Other Vegetables
Other vegetables are also allowed on this diet. You may eat tomatoes, celery, asparagus, green beans, pumpkin, squash, onions, garlic, cucumber, bell peppers and beets. Because carrots and sweet potatoes are sweet, you should eat them in limited quantities.
