Look at a soup label and subtract the grams of fiber from the total carbohydrate count to obtain the number of net carbs in the soup. A simple method to create healthy low-carb soup is to prepare a fresh pot in your home that is devoid of any artificial preservatives, flavors or sodium.

Vegetables

Fresh vegetables are low in carbohydrates and high in fiber. Creating fresh soups from raw veggies only requires a large pot and a bit of imagination. Low Carb Recipes suggests a roasted vegetable soup made from plum tomatoes, eggplant, onions, garlic and chicken broth. After washing and cooking the beans, they are blended to create a creamy soup with a low net carb count at eight per serving, according to Low Carb Eating. Meaty Choices

Beefy chilis and stews are meaty soup choices that can be made low carb if you thicken the stock with pureed beans instead of flour or starches.
