If you are concerned about your blood glucose levels or are looking for healthy, nutritious foods that are low in carbohydrates in their raw, uncooked state, you have plenty to choose from. The following foods are low in carbohydrates, are uncooked and each food contains its average serving size along with the total amount of carbohydrate per serving.
Fruits
Fruits contain glucose that is the primary fuel source for the brain, nervous system and many other cells. Good low carbohydrate sources include raisins (1/4 cup, 31 rams), apples (one small,15 grams), bananas (one medium, 27 grams), sweet cherries (3/4 cup, 17grams), cantaloupe (3/4 cup, 11grams), plums (one medium, 10 grams) and watermelon (1 cup, 12 grams).
Vegetables
Vegetables are good sources of low carbohydrate foods that can be eaten either in their raw form or cooked. They contain important vitamins, minerals and nutrients. Good choices include broccoli (1 cup, 6 grams), celery (two medium stalks, 2 grams), iceberg lettuce (1/6 head, 3 grams), mushrooms (1 cup, 2 grams) and spinach (1 cup, 1 gram).
Nuts and Seeds
Nuts and seeds are an excellent source of fat and Omega-3 fatty acids that are important in reducing your risk for heart disease. Some good choices of nuts and seeds include unsalted cashews (1 oz., 8 grams), walnuts (33 oz., 6 grams), salted peanuts (1 oz., 5 grams), pumpkin seeds (1 oz., 4 grams) and extra crunchy peanut butter (2 tbsp, 7 grams).
