Gallstones are small hard, pebble-like deposits that develop inside the gallbladder. Gallstones form when liquid stored in the gallbladder hardens into pieces of stone-like material. According to the National Digestive Diseases Information Clearinghouse, scientists believe cholesterol stones form when bile contains too much cholesterol, too much bilirubin, not enough bile salts, or when the gallbladder does not empty completely or often enough. A low-fat diet is often used to prevent complications related to gallstones.
Fats
Diet that are high in fat should be avoided with gallstones. Saturated fats found in meats, butter, and other animal products have been associated with gallstones. High fat dairy products such as whole milk, cream, sour cream, non-dairy creamer, whole milk cheeses and cheese spreads should be avoided. Soups and other sauces made with heavy cream should be avoided. Fatty, or heavily marbled meats should also be avoided. All other fats in excess should be avoided such as butter, margarine, oils and deep fried foods.
Sugar
High intakes of sugar have been associated with gallstones. Diets that are high in carbohydrates, such as pasta and bread, can also increase the risk for gallstones as carbohydrates are converted into sugar in the body. Some high sugar foods that should be avoided include ice cream, pastries, cakes, cookies, pies, doughnuts, pudding made with whole milk, cream puffs, turnovers and chocolate.
Cholesterol
A type of gallstone that can be formed is made from cholesterol. Cholesterol stones are usually yellow-green and are made primarily of hardened cholesterol. Diets high in fat and cholesterol can increase the risk of gallstones due to increased cholesterol in the bile and reduced gallbladder emptying. A diet high in cholesterol should be avoided. This includes any fried, fatty, or heavily marbled meat, eggs, and whole milk dairy products. Other foods containing egg, cheese, or made with satuated fat should be limited.
