A head of garlic consists of several cloves surrounded by a crisp white skin. Each clove, in turn, is covered by the same crisp skin. One head of garlic has between four and 20 cloves of various sizes.

According to the Centers for Disease Control, there are 5 calories in one clove of garlic. One clove of garlic also contains about 2 percent of the daily recommended serving of vitamin C for a 2,000 calorie diet.
Other Nutrients
The University of Maryland Medical Center reports that garlic contains antioxidants which may help prevent the development of certain ailments including heart disease. This protection generally comes from ingesting aged garlic extract.
