The South Beach Diet began as a bestselling diet book published in 2003. The diet is now offered online and has spawned cookbooks, a "supercharged" diet plan and multiple convenience foods such as bars and frozen dinners. The diet consists of three phases -- each of which has specific food restrictions. All three phases encourage snacking twice a day to reduce cravings and keep hunger in check. Despite the food limitations in each phase, there are many options for snacking.
Phase One
In phase one you severely restrict carbohydrates to break your cravings for sugars and refined flours. Carbohydrates are restricted to fewer than 20 g per day, says MayoClinic.com. Quick and easy snacks in this phase might be cheese sticks, single containers of sugar-free, fruit-flavored gelatin or a handful of mixed nuts. Snacks that require a bit more preparation are ½-cup of low-fat cottage cheese with diced tomatoes and cucumbers, turkey and cheese rolled together and sliced into pinwheels, or a tomato salad with sliced mozzarella.
Phase Two
In phase two, you begin to reintroduce carbs in the form of whole-grain bread, brown rice and starchy vegetables such as sweet potatoes and peas. Easy snacks in this phase might consist of peanut butter and celery sticks or air-popped popcorn tossed with black pepper and grated parmesan cheese. Hummus or black bean dip with baked tortilla chips and celery sticks or a sandwich made with peanut butter, green apples and a slice of whole grain bread are other snacks for this phase. Continue to enjoy any snacks from phase one, as well.
Phase Three
Phase three is the maintenance part of the plan and includes just about every type of food in moderation. You continue to apply the guidelines from the first two phases about avoiding processed carbs and sugars, but are given more flexibility for snack choices. Fruit salad, dates and nuts and plain yogurt are easy snacks for this phase. If you have time to whip up a snack, oven-bake sweet potato slices and sprinkle them with salt and rosemary. Hard-boiled eggs with cut-up veggies, edamame or red pepper boats filled with tuna salad also work for this phase.
