Starting the day with a healthy breakfast is essential for physical stamina, mental clarity and overall body function. Unfortunately, morning is often the most rushed time of day, and eating healthy can be a challenge. If the food is delicious, it won't be quite as difficult. Finding a way to work a healthy, tasty breakfast into the schedule is one of the most important things to do.
Breakfast Smoothies
A blender smoothie with a cup of plain or vanilla yogurt, a cup of frozen berries, a cup of orange juice, a banana and 1/4 cup of soy or whey protein powder and honey provides many of the nutrients to help start the day. This is a delicious meal alone or served with a slice of whole wheat toast.
Breakfast Pizzas
A whole wheat tortilla or English muffin topped with a scrambled egg, 1/2 cup of steamed vegetables (bell pepper, spinach or chopped broccoli) and 1/4 cup of grated cheese baked in a 350 degree oven until the cheese melts has both nutrition and flavor. This is delicious served with a glass of orange juice.
Breakfast Burrito
Nontraditional breakfast foods might be the answer for finicky eaters. A whole wheat tortilla wrapped around leftover chicken, beef or fish with 2 tablespoons of salsa will be satisfying.
Healthy Breakfast Cereal
Cooked oatmeal mixed with flaxseed, berries and almonds with a splash of honey is a delicious breakfast cereal. It combines protein, grains, fruit and fiber for a healthy and tasty breakfast.
Yummy Toast Breakfast
Whole wheat toast spread with 1 tbsp. of cream cheese, all natural strawberry jam and 1 cup of crushed berries tastes like dessert but provides needed energy first thing in the morning. This is delicious open-face or with two slices of toast for a sandwich that can be eaten on the run.
Pancake Lover's Breakfast
Pancakes mixed half and half with whole wheat flour and pancake mix, with fruit and protein powder added will give a little extra boost of flavor and energy. These can be made in advance and frozen.
Extra Tips
Breakfast foods are more appealing if presented in a creative way. Adding an array of fruit around scrambled eggs will make them more appealing. Presenting a variety of color and texture is another way to make breakfast more appetizing.
