Irish soda bread is a hearty quick bread traditional in Ireland. The main ingredients in the traditional bread are flour, buttermilk, baking soda and salt. Irish soda bread has a crunchy crust and hearty interior. It was traditionally cooked in an iron pan set in the fireplace or on a griddle, but it can also be cooked in your oven. It is best eaten the same day it is made.

Traditional Irish soda bread recipe from European Cuisines calls for 3 1/2 cups cake or all-purpose flour, 1 tsp. sugar, 1 tsp. salt, 1 tsp. baking soda and 8 to 10 oz. of buttermilk. This recipe makes 16 servings, and each serving has about 106 calories, according to the USDA nutrient database.

Soda Bread With Fruit

A recipe for Irish soda bread published on the King's County, Washington, public health website is made with 2 cups of all-purpose flour, 3 tbsp. unsalted butter, 2 eggs, 3/4 cup of buttermilk, 2 tbsp. of brown sugar and 1/3 cup dried cranberries or raisins plus baking soda, baking powder and salt. This recipe makes 10 servings and each serving contains 158 calories.

Cake flour which is very soft and has the least gluten of all the wheat flours makes a more tender soda bread. All-purpose four has more gluten and will make a somewhat sturdier bread. Buttermilk contributes to the flavor, as it does in buttermilk biscuits or pancakes, but you can used regular milk soured with a teaspoon of lemon juice or vinegar if you don't have buttermilk.
