Eggs are high in protein and can be used to make delicious low-carbohydrate meals for diabetics. They are high in riboflavin, phosphorus and vitamin B12, according to Self Nutrition Data. Eggs are high in cholesterol and fat, as well, so if you are trying to lose weight, stick to egg whites or use an egg substitute.

Egg Salad

Egg salad is a simple lunch or dinner option. Chop up some hard-boiled eggs, and add a small amount of fat-free sour cream and fat-free mayonnaise. Add mustard and a dash of salt and pepper. You can jazz it up with some chopped red or green peppers, parsley or a shredded carrot. Eat it on top of a green salad, or make a sandwich using low-calorie, low-fat whole wheat toast. To cut back on the cholesterol and fat, do not use all of the egg yolks.

Omelet

An omelet is quick and easy, and makes a filling meal. Diabetics can make a light omelet for breakfast or a heartier one for dinner. Spray your pan with nonstick cooking spray. Scramble some eggs, or just use egg whites for a low-fat omelet. Cook the egg in the frying pan, and add chopped peppers, spinach leaves, tomatoes or onion. Add some low-fat mozzarella cheese. Serve this with fruit or low-fat, low-calorie whole wheat bread or pita bread.

Boiled Eggs

If you want a quick breakfast or lunch, boiled eggs are the right option for you. According to the American Dietetic Association, hard boiled eggs can last a week in the refrigerator. Use some low sodium salt and pepper to flavor your egg. Don't eat the yolk if you want a low-fat, lower cholesterol option. Eat your egg with some fruit, whole wheat crackers or low-fat yogurt.

Egg Taco

Use an egg substitute cooked with nonfat cooking spray, and add this to a taco shell. Top with spicy salsa and shredded low-fat cheddar cheese. If you wish, add some guacamole or avocado slices, chopped tomato or chopped peppers. This taco is lower in fat and cholesterol, hearty and healthy.

Deviled Eggs

Deviled eggs are a good option for diabetic party guests. Make a low-fat version of deviled eggs. Instead of using the yolk for the middle, mix up some hummus. Spice the hummus with a little curry powder or lemons. Sprinkle with paprika.
