Traditional marmalade is made with Seville oranges, also known as bitter orange, which have a pronounced orange flavor and tangy taste. While a little intense for eating out of hand, Seville oranges make a sweet-tart marmalade with a bitter tang from the peel.

California Orange Marmalade

California navel oranges are large and sweet with an easy-to-peel skin. They make a sweeter marmalade, so lemons are usually added to balance the sweet oranges with some tartness. The peels of California oranges are not as bitter as Seville orange peels, but still add a mild bitter tang to the marmalade.

Marmalade made with 4 large California oranges, 2 large lemons and 8 cups of sugar produces 4 pints of marmalade containing a total of 128 1-tbsp. servings. Each tbsp. contains 51 calories, 13 g of sugar plus about 7 percent of your daily requirement for vitamin C.

How to Serve Marmalade

Serve marmalade with toast, biscuits or scones. Try it with cream cheese on a bagel or mascarpone cheese on a Christmas bread like panettone. Because of its flavor, you can use a thin layer of marmalade as a delicious but somewhat lower-calorie filling between layers of cake. Serve a dab of marmalade next to poultry, just as you would use cranberry relish.
