Knox Gelatine -- spelled with an "e" at the end, British style -- is a brand name of granulated gelatine used to create desserts, jellies and other foods. Unflavored gelatin contains no sugar, which limits the amount of calories in each serving.

Gelatin

Gelatin is made from collagen, a protein substance found in the bones, skin and connective tissue of animals. Gelatin is extracted from the collagen with hot water, then concentrated, filtered, cooled and dried into strips. In 1889, Charles B. Knox of Johnston, New York, began granulating gelatin by breaking down the strips using high-speed mills.
