Healthy Vegan Soups

If you do not consume any type of animal product, it may be challenging to find recipes that you can eat. Vegan soups can be prepared using many different and nutritious ingredients that do not include foods from animal sources. Nava Atlas, author of "Vegan Soups and Hearty Stews for All Seasons," notes that there are many ways to combine your favorite ingredients to create hearty and healthy vegan soups.

White Vegetable Soup

White vegetables are nutritious and can be combined to create a healthy and hearty soup, notes Atlas. Heat a tablespoon of oil and cook several white onions until soft. Add peeled turnips and potatoes and a few minced cloves of garlic and cover with water. Bring to a boil and cook until the vegetables are tender. Puree the vegetables in a blender, return to the pot and add enough rice milk to create a smooth consistency. Reheat and garnish with red bell pepper, green peas, parsley and green onions. Atlas recommends using white onions but suggests using yellow ones if white ones are not in season.

Bean Soup With Greens

Beans and leafy greens are both vegan ingredients that can provide the base for a filling and nutritious soup, notes Robin Robertson, author of "1,000 Vegan Recipes." Add some oil to a soup pot, add chopped onions and cook until soft. Add some minced garlic cloves and cook for about one more minute. Add beans, such as kidney or white beans, and vegetable broth to the pot. Simmer the soup for a few minutes and then add greens, such as Swiss chard, kale or spinach. Cook for about 15 more minutes and serve. Robertson suggests experimenting with different kinds of beans, greens and seasonings or to add pasta or rice after adding your greens.

Mushroom Soup

Mushrooms are a nutritious vegan soup ingredient that contain numerous nutrients and are vegan. Robertson suggests using various kinds of mushrooms combined with broth and vegetables to make a filling and healthy vegan soup. Heat some oil in a stock pot and add chopped onions, carrots and celery. Cook the vegetables until soft and then stir in mushrooms, such as shitake, cremini and white button. Add vegetable broth and simmer the soup for about 30 minutes. Add your favorite spices, such as thyme or parsley, to enhance the flavor of your soup. Robertson also suggests adding frozen peas to add more bulk and nutrients to your soup.
